The "one true pairing" is a concept native to fanfic, particularly slash. Two characters are said to be meant for each other, canon notwithstanding.

This widget, of course, just generates pairings at random.

It stands for "One True Pairing," based on the notion that many overeager fans consider that the two people that they want to stick together romantically are of course the only two people anyone should ever want to pair up from the fandom in question.
