I think I can say I "cared" about VR.5. I was disappointed that it was canceled and would like to have seen the rest of the story. And not just because Giles was in it because this, you know, was before that (when he was just the Taster's Choice guy).

So, why not put together a fan based continuation. They're working on one for Space:1999 (Space:2099), and the original Star Trek has one.
